Italian Cheeses are defined by their region of production in Italy, and each cheese producer develops their own refined taste and texture from cow, buffalo, sheep or goats milk.  Wisconsin produced Italian Cheeses use similar production methods to ensure the same taste and texture as their Italian originals.
